- shallot1
- ground chicken1/2 lb
- Worcestershire sauce1 tsp
- garlic powder1 tsp
- paprika1/2 tsp
- dried oregano1/4 tsp
- chili powder1/4 tsp
- small corn tortillas6
- mozzarella cheese2 oz
- tomatoes2
- romaine lettuce2 heads
Directions
Wash and dry the tomatoes and romaine.
For this step: tomatoes, romaine lettuce
Peel the shallot and slice it thinly.
For this step: shallot
In a medium bowl, whisk the vinegar with some of the olive oil and a little salt and black pepper. Add the shallot and let it pickle lightly while you prepare everything else.
For this step: red wine vinegar, extra virgin olive oil, salt, black pepper
While the shallot pickles, stir together the mayonnaise, ketchup, Dijon mustard and cayenne pepper in a small bowl. Set this special sauce aside for serving.
For this step: mayonnaise, ketchup, Dijon mustard, cayenne pepper
In another bowl, mix the ground chicken with some of the olive oil, the Worcestershire sauce, garlic powder, paprika, oregano and chili powder, and a little salt and black pepper until evenly seasoned.
For this step: ground chicken, extra virgin olive oil, Worcestershire sauce, garlic powder, paprika, dried oregano, chili powder, salt, black pepper
Spread the chicken mixture in a thin, even layer over one side of each tortilla, right to the edges.
For this step: small corn tortillas
Coarsely grate the mozzarella.
For this step: mozzarella cheese
Dice the tomatoes and add them to the shallot dressing. Thinly shred the romaine, add it to the bowl and toss to make the salad.
Heat a thin film of the olive oil in a large nonstick skillet over medium-high heat.
For this step: extra virgin olive oil
Once the oil shimmers, add as many tacos as fit, chicken-side down. Cook until the chicken is browned and cooked through, about 2 minutes, pressing them flat with a spatula halfway through.
Turn the tacos chicken-side up, top them with some of the mozzarella and cook until the cheese melts, about 1 minute. Move them to a plate, then repeat with the rest of the tacos, adding a little more oil to the skillet if it looks dry.
Top the tacos with some of the salad and drizzle with the special sauce. Serve the rest of the salad alongside.
