  • Yukon Gold potatoes1 1/2 lb
  • olive oil2 tbsp
  • smoked paprika1 tsp
  • garlic powder1/2 tsp
  • saltto taste
  • ground black pepperto taste
  • bacon6 slices
  • jalapeno pepper1
  • 80/20 ground beef1 lb
  • onion powder1 tsp
  • shredded cheddar cheese1 cup
  • barbecue sauce1/4 cup
  • mayonnaise3 tbsp
  • yellow mustard1 tbsp
  • scallions2

Directions

14 steps
  1. Heat the oven to 425°F.

  2. Wash and dry the potatoes, jalapeño and scallions.

For this step: Yukon Gold potatoes, jalapeno pepper, scallions

  3. Cut the potatoes into ½-inch cubes. On a large sheet pan, toss them with the olive oil, smoked paprika, garlic powder, and a little salt and pepper, then spread them in a single layer.

For this step: olive oil, smoked paprika, garlic powder, salt, ground black pepper

  4. Once the oven is hot, roast the potatoes until browned and crisp at the edges and tender in the center, 25 to 30 minutes, flipping them halfway through. When they're done, take them out and leave them on the pan.

    30 min
  5. While the potatoes roast, cut the bacon crosswise into ½-inch pieces. Stem the jalapeño, finely chop it, and keep it in a small bowl.

    For this step: bacon

  6. Stir the barbecue sauce, mayonnaise and mustard in a small bowl until smooth. Trim and thinly slice the scallions. Set the sauce and scallions aside for serving.

For this step: barbecue sauce, mayonnaise, yellow mustard

  7. When the potatoes have about 20 minutes left, put the bacon in a large skillet over medium heat. Cook, stirring now and then, until it begins to crisp, 5 to 6 minutes.

  8. Add the jalapeño and cook until the bacon is crisp and the pepper has softened, about 2 minutes. Move the bacon and jalapeño to a plate, then carefully pour off the fat, leaving a thin coating in the skillet.

  9. Turn the heat under the skillet to medium-high. While it heats, divide the beef into loose balls about 2 inches across, handling it as little as possible.

For this step: 80/20 ground beef

  10. Once the skillet is hot, add half the beef balls and smash each into a thin patty with a sturdy spatula. Season with half the onion powder and a little salt and pepper. Cook without moving until deeply browned underneath, 2 to 3 minutes, then flip and cook until browned and cooked through, 1 to 2 minutes more. Move the patties to a cutting board.

For this step: onion powder, salt, ground black pepper

  11. Cook the rest of the beef the same way, seasoning it with the rest of the onion powder and a little salt and pepper, and add it to the cutting board.

For this step: onion powder, salt, ground black pepper

  12. Chop the patties into rough bite-size pieces.

  13. Turn the heat to low. Return the beef to the skillet with the potatoes, bacon and jalapeño, and toss gently. Scatter the cheddar over the top, cover, and cook until the cheese melts, about 2 minutes.

For this step: shredded cheddar cheese

    2 min
  14. Spoon the skillet mixture into shallow bowls, drizzle with the sauce, and finish with the scallions.
